Made using rock fish, Conger, Scorpion Fish and Gurnard, this classic French fish soup is lightly sweet with peppery notes from fennel. Just warm in a saucepan or microwave and serve with bread, add Gruyere cheese and a Rouille sauce for a perfect starter or lunch.

Georges Hilliet, the son of a rowboat fisherman, created the La Belle-Iloise Conserverie in 1932 near the fishing port of Quiberon, in Brittany, Western France. Since then the business has remained family operated for the last 85 years with the focus maintained on the highest quality ingredients and sustainably caught fish, now  run by George's Granddaughter the cannery is still in Quiberon.
