Founded after the Spanish Civil war by Carles and Magdalena Sureda, Anxoves de l'Escala, has become one of the oldest and most important Anchovy Factories in L'Escala, on the North Eastern Costa Brava, Spain. Anxoves de L'Escala still use the traditional methods of preserving the Anchovies which involved storing them in barrels from 6 months to 2 years to ensure their characteristic flavour and texture.
