Rioja, Northern Spain, is well known as a wine producing area but it is equally famous for its gastronomy and regional produce. Conservas Rajope is a family run business that started in the 1980s and focuses mostly on drying and preserving the fruits and vegetables of the region.
These guindillas are pickled and then stored in sunflower oil giving them a rich and luxurious feel. A little bit of heat and a little hit of vinegar make these a very moreish beer snack.
