We slowly smoke large Spanish garlic cloves from Cordoba, in the Southern Spanish region of Andalusia, over a whiskey wood fire resulting in sweet, gummy cloves.
By storing them in a jar we ensure that as few of the volatile flavours and aromas from the smoked garlic are lost over time.
Store in a cool place out of direct sunlight.
