This ratatouille style vegetable stew originates from the area around Avignon, southern France.
Best served hot with roasted or grilled meats, it can also be eaten cold or slightly chilled, perfect as a starter in summer or as a vegetable side dish with a drizzle of a fruity olive oil. For an extra treat, add 2 or 3 whole eggs to any leftovers, beat, and make an omelette.
Guintrand has been canning locally grown fruits and vegetables in Carpentras, Provence, for well over a hundred years. Starting from humble beginnings in 1898 with only a horse drawn tomato press. Still in the family the company is now operated by the fourth generation of the Guintrand family.
Storage: Store in a cool dry place. Once opened store refrigerated and consume within 3 days.
