Probably the most important edible wild fungi, widely used in Europe, especially in Italy where they are known as Porcini. Ceps can be found from the midsummer to early autumn. They grow typically near beech trees in warm wood edges. They are a versatile mushroom with an exquisite flavour which is readily imparted in sauces.
