Based in the town of Santona on the Northern Coast of Spain, in the bay of Santona, Cantabria, Hoya was formed in 1940 by Tomas Hoya Hedilla as a specialist in preserving anchovies.
The anchovies, or bocarte, caught fresh from the Cantabrian Sea, mature in barrels for a minimum of seven months until they achieve the characteristic aroma, flavour and smell.
Store in a cool dry place.
Once opened store refrigerated and consume within 2 days.
