Following the same method for 120 years these white asparagus tips are harvested in the regions of Navarre, Rioja, and Aragon, between the end of March and the beginning of April, they are picked at six in the morning so that they can be canned on the same day without losing their water content and maintain their flavour.
These white asparagus have a thick white stalk that is tender and crunchy with a mellow and buttery taste with little or no bitter aftertaste. Perfect dipped in a fresh mayonnaise or drizzled with good quality olive oil as a starter or tapa.
