Nora peppers are a dry round pepper that are used to make paprika powder. The 'Carne de Nora' or Nora pepper 'meat' is the flesh of the pepper where the skin and seeds have been removed.
Nora peppers are rich and flavoursome, with little bitterness and a great colour and aroma, use as a base for a 'sofrito' or cooked down with tomatoes for a rich sauce for chicken or pork.
A family business started over 60 years ago in Rioja, below the Cantabrian mountains in Northern Spain, La Legua specialise in dried, pickled or pureed peppers with little processing.
Store in a cool dry place.
