In the Spanish town of Minaya the saffron flowers are handpicked as the sun is rising, the stigma (threads) are then painstakingly removed by hand and then immediately toasted, a process unique to the La Mancha region, this along with the soil and perfect weather conditions allow this saffron to be considered the best in the world.
The rich aroma, vibrant colour and slight bitterness make it ideal to use in a traditional paella, grind a few threads and dilute into a small amount of stock, pour in just before the dish is fully cooked.
Use the same preparation for a meat stew or add the saffron to vinegar with garlic and thyme for a fish marinade.
