Ventresca (from the Bonito del Norte) is considered a delicacy. The tender belly meat of tuna, the most succulent and fatty part of the fish it delivers a delicate texture and rich, yet mild flavour and is often used simply in salads, with tomatoes, or enjoyed alone.
These tuna are caught in the Bay of Biscay, between the western coast of France and the Northern coast of Spain, during summer. Using sustainable, traditional hook-and-line methods famous for their more sustainable fishing practices.
