Bonito del Norte from the white tuna (or Albacore tuna) is a mild-flavoured fish caught in the Bay of Biscay, between the western coast of France and the Northern coast of Spain, during summer. Using sustainable, traditional hook-and-line methods famous for their more sustainable fishing practices.
This tuna is pale colour with a tender texture, preserved through being hand-packed and preserved in olive oil. A versatile ingredient for salads, tapas, and pasta.
