Founded in the town of Markina-Xemein in the Basque country, Northern Spain by Italian Salvatore Orlando at the end of the 19th century, bringing traditional Italian preserving and salting techniques to the rich fishing of the Bay of Biscay. Salvatore Orlando later married a Basque woman, Simona Olasagasti, the namesake of the business.
