Using traditional methods of attracting the northern Tuna with anchovy bait the fish are landed each by hand with bamboo-pole rods to ensure that each fish is of the required species and maturity. Finally the fish are checked and processed by hand making this an extremely careful process.

Founded in the town of Markina-Xemein in the Basque country, Northern Spain by Italian Salvatore Orlando at the end of the 19th century, bringing traditional Italian preserving and salting techniques to the rich fishing of the Bay of Biscay. Salvatore Orlando later married a Basque woman, Simona Olasagasti, the namesake of the business.
