From the 'Ile de Re' an island off the South Western coast of France, Sauniers, or 'Salt Workers' have been harvesting from the salt marshes here in the same way since the middle ages, carefully managing the water flow through hand-carved clay basins for evaporation until it's the coarse grey salt you see bagged here.
Subtle in flavour and coarse in texture its great for adding to sauces, stews and soups.
